I was introduced to the Screaming Leprechaun at the end of a late shift on Paddy’s day. They go down smooth and then go to work on making you less vertical surprisingly fast.

The recipe is simple, you need Irish Cream eg. Bailey’s or Irish Knights (thanks for that one Michael) if you’re feeling skint and some Irish Whisky like Jameson’s. It HAS to be Irish Whisky because of the way it’s made from a blend of whiskies. Others just won’t mix.

Simply mix equal parts of the cream and the whisky over ice. Oh, and drink it :)

Extras

Other nice things that will mix with Irish cream include a nice gold Rum like Appleton’s VX or a greek Brandy like Metaxa.

Mixology is a lot about experimentation. We made what I’ll dub a ‘Wailing Rasta’ with a Rum Cream and the afore mentioned Rum. Bloody good it was too. My point is that there are many categories of drinks, the members of which can be interchanged in any cocktail recipe. You can improvise by varying spirits, creams, liqueuers and fruits.
